The nights are drawing in and Autumn is definitely upon us, so it’s time to get cosy, stay warm and enjoy some delicious and comforting seasonal recipes.
Our delicious organic milk and local farm produce is perfect for helping create some of these tasty treats which the whole family should love! Alongside old favourites like cauliflower cheese, rice pudding and crumble and custard our team have put together some of their favourite autumn recipes:
Pumpkin Spiced Latte
Pop a couple of teaspoons of pumpkin puree in the bottom of a mug or latte glass and add a pinch of your favourite spices – we love cinnamon, ginger and nutmeg. Top with a shot of espresso and hot Woodhorn Farm milk.
Cheese, Onion and Potato Pie
A warming crowd pleaser – ideal for Bonfire Night! Gently fry a large onion in butter until soft and caramelised before adding a couple of tablespoons of flour, cooking off for a few minutes and adding milk or stock gradually to make a creamy sauce. Season well and add a dollop of mustard and grated cheese. Peel and cut potatoes into chunks and boil until tender before adding to the mix. Pour the creamy mixture into a pie dish and top with shortcrust or puff pastry before baking in the oven until golden brown. Delicious with seasonal veg or baked beans!
Creamy Pumpkin Soup
A warming bowl of soup is a real comfort in the autumn. Chose a medium sized pumpkin – or even several different varieties – and cut into chunks. No need to peel! Pop in a roasting tray with oil, salt and pepper and bake in the oven until very soft and tender. If you’re keen for something a bit spicier add some curry powder, garam masala or chilli to the oil mix! Let the pumpkin cool before scooping out of the shell and blending with stock or Woodhorn milk until smooth. Enjoy warmed up with crusty bread and butter.
Sticky Toffee Pudding
The perfect pud for autumn! Combine 100g of soft butter, 175g muscovado sugar, 225g self-raising flour, 2 Rookery Farm eggs, 1tsp of baking powder, 1tsp of bicarbonate of soda and 3 tbsp black treacle and beat well. Add 275ml Woodhorn Farm milk and mix again before pouring into a greased ovenproof dish and baking for 35 minutes at 180C (160C fan). Make a sticky sauce by melting together 100g butter, 125g light muscovado sugar, 1 tbsp black treacle, 300ml double cream and 1 tsp vanilla extract. Pour over the pud before serving. Ideal with cream or custard made from Woodhorn Farm milk!
